Banana and peanut butter oat cookies

I guess if it has banana in it… it must be healthy right? I’m pretty sure thats how it works.

The stress of packing for my first year of university, leaving home for the first time and leaving my little puppy behind.. I guess homely food is always a plus point when you are in your new home.. And I guess these are it.. cookies! They cure everything.. from home sickness to helping you finish that essay that you have left last minute.

Ingredients:

  • 1 cup mashed bananas or 2 ripe bananas
  • 13cup peanut butter(natural if you have it)
  • 4 teaspoon maple syrup
  • 1 teaspoon vanilla
  • 14teaspoon salt
  • 1 teaspoon cinnamon
  • 1 12cups old fashioned oats
  • 12cup shredded coconut
  • 12cup of mixed nuts

Method:

  1. Preheat oven to 180 degrees.
  2. Mash bananas with a fork and mix in peanut butter, maple syrup, vanilla, salt, and cinnamon and nuts together.
  3. Stir in oats and coconut.
  4. Drop by tablespoon onto a non stick cookie sheet (lined with parchment paper or sprayed with non-stick spray).
  5. Flatten a bit to shape the cookie (they don’t rise or spread at all when baking).
  6. Bake for 12-15 minutes, rotating the pan halfway through.
  7. Allow to cool, and enjoy!

Bunless easy bean burgers

I often buy bean burgers, but I often think they are too spicy (probably because I’m actually a total wimp) but I thought for a change.. no I’m not going to get my favourite ones out the freezer, I’m going to make my own! so thats what I did, I raided the cupboard to find anything I could put into these!

I 100% just threw everything into these little babies.

What you will need:

  • 5 tsp extra virgin olive oil
  • 1 small onion, finely chopped
  • 1 carrot, coarsely grated
  • 1 sweet potato (cut into cubes)
  • handful of spinach
  • hallumoi (optional)
  • 1 can of cannellini beans, drained and rinsed
  • 55 g (2 oz) fresh white breadcrumbs (I simply popped mine into a food blender)
  • 2 garlic cloves
  • 1 handful of kale
  • chili
  • 1 egg

Method:


  1. Cut all vegetables into small portions/cube sizing (this will make it easy when it is combining all the ingredients together)
  2. Pop coconut oil or (oil of your choice) onto a baking tray, add all veg onto the tray and cook for 20 minutes or until vegetables are all soft.
  3.  Tip the cannellini beans into a bowl and mash with a potato masher to break them up roughly. Add the cooked vegetables, breadcrumbs, cheese, and salt and pepper to taste and egg. – using a potato masher.. I MASHED everything all together – pretty liberating.
  4. Use your hands to mix all the ingredients together, then divide into portions and pop in the oven for 30 minutes and

I served these with coleslaw and homemade chips, along with my favourite thing ever.. kale! 100% gonna try kale crips after this recipe as they came out soooo crispy and tasted really really good! so stay tuned for that recipe, which is exciting! Due to the beans, spinach and kale + a whole load of other fab ingredients. This is rammed full of iron and protein which is perfect for after a workout.

Easy peasy mushroom teriyaki with egg fried rice

This week I’ve been home alone, I’ve found myself listening out for all those noises that you don’t care about when there is like three other people at home! Amongst the anxiety of things going bump in the night, I become a bit excited of the prospect of cooking a lot more independently. I do it quite a lot anyways, but I’m always cooking for 3+ people, and sometimes something that I necessary don’t want to be cooking!

Before I became a vegetarian, I really loved chicken teriyaki, I felt like it was kinda one of my signature dishes at home and everyone seemed to love it too! Therefore, with that in mind and did a little bit of Pinterest inspo (but who doesn’t). I decided to share with you guys a little mix up with on my favourite dish.

I made this for one person so add how much depending on how many you are making it for.

You will need

For the teriyaki mushrooms:
  • 1/2 tbsp oil
  • ~ 4 medium mushrooms, sliced
  • 1 tbsp honey or maple syrup
  • 2 tbsp soy sauce
  • 1 clove garlic, minced
  • Black pepper

Vegetables:

  • 1 pak choi
  • 4 broccolis with just the heads
  • handful of grated carrots
  • handful of kale
  • half a red onion
For the simple egg fried rice:
  • 1/2 tbsp oil
  • 2 eggs, lightly beaten
  • 100g cooked white rice (~ 1 2/3 cups)
  • 1 tbsp soy sauce
To serve:
  • 1 tsp sesame seeds
  1. Heat coconut oil in a frying pan, and add all your vegtables
  2. Secondly, add the honey, soy sauce, garlic, and plenty of black pepper. Mix to combine, and pour over the vegetables. Cook over a medium-high heat for another few minutes, stirring regularly to prevent burning, until the sauce has reduced and become sticky.
  3. To make the egg fried rice, in a frying pan, add the eggs. Cook over a fairly low heat for 5 minutes, stirring regularly, until fully cooked.
  4. Serve the egg fried rice topped with the teriyaki mushrooms, some sesame seeds.

I really hope you love this as I definitely loved making it and eating it! so nourish and so easy to make after a long day of work or if you simply can’t really be bothered to cook! Such an easy peasy meal to make.

How to make the best chips / French fries, that are kinda healthy?

This took me ages to master.. and research. You probably think, does she have anything else to do with her time? well yes I do, but overtime I would make chips, it would go wrong and it would annoy me so much! Everyone loves crispy chips right? Well heres how you get those fellas.

The aim of the game is too leave them in cold water around 30 minutes – 1 hour

Firstly, cut your potatoes up. Cut them up so they are all identical in size, this will make it easy in the cooking process allowing them to all at the same time. After you have done this, place them into a bowl and fill up with water ( I like to add a pinch of salt to the water) then place in the fridge for 30 minutes – 1 hour. This will get rid of the starch from the potatoes allowing them to really crispy!! pure deliciousness.

After you have left them and rinsed the water from the bowl, this is when the real fun takes place. As you can see, I have added olive oil, salt and pepper! (This was due to being away from home and having a lack of resources).IMG_8214 2.JPGHowever, you can change this and mix it up! You can add rosemary, paprika, mixed herbs. This will really too add a flavouring to your chips. Instead of using olive oils, you can use coconut nut oil instead as an alternative.

I hope this little post helps on how to get those little chips just right.

Pop them in the oven for 30 minutes at 180 degrees, until they are golden brown.

Mad about pizza?

Hey, you’re back again reading my blog! this is my first proper post on healthy eating so lets crack on..

I told you guys previously that I wanted to share my recipes with regards home cooking! I love this ability of me just being in the kitchen and having fun! This idea of creating food which I can improvise, challenge flavourings and textures I absolutely relish! The look on peoples faces when i ask do you like it? or they say wow this is lovely! This is something I wish to share with you all which is also healthy, easy to make and made with love.

I love pizza! no other words needed! However, there is a difference with homemade pizza and I love it in two different variations:

Make your own dough:


what are you going to need?


  • 2 packets of dry yeast
  • Half a cup of warm water
  • Half a cup of spelt flour: Spelt is high in protein which is nutritionally beneficial which is not the case with wheat flour.
  • Half a cup of bread white flour

I love working with spelt flour as it adds a difference of flavouring to pizza and it is good for you as well which is an added bonus!


Method:

  • Place the sachets of yeast in a bowl with half a cup of warm water: leave this for 2 minutes.
  • Put both flours into a bowl and mix together until they are completely blended.
  • Create a well and put the yeast into the middle of the well, gradually combining the flour with the yeast until it has come together.
  • knead the dough until it is springy.
  • Once a dough shape, place into a bowl and keep warm and covered until it has doubled in size from the yeast!
  • From being left for a period of time, you now have your dough ready to be rolled out and made into pizza!
  • just simply flour dust your surface that you are working on and roll your dough into your shape ready for toppings!

urmmm hello pitta breads? they do say not all superheroes wear capes!

Sometimes, I just cant be bothered to cook from scratch, and I just look at the cupboard and I just think not tonight… but I’ve always got pitta breads in the freezer or in the breadbin. These are perfect for pizza bases and are very filling as one or two with a side salad.

Method


  • Toast them before you put your toppings on them – This stops the pitta bread from getting soggy!

hey its me, lets do this

I’ve been meaning to do this for quite a while now and I kept putting it off. I kept thinking will anyone want to read my blog? or be this is awful please stop typing now… For anyone for doesn’t know me or doesn’t follow me on Instagram, my name is Alice, I’m 20 and live in surrey. I’m a textile student (I’m starting Bath university in September) and I have a complete obsession with food. I’m constantly hungry, which does have its faults! but of course I looove cooking and baking, but just experimenting and having fun. I feel its important to always cook from scratch and I try to do it as much as I can, I always find it concerning when people don’t actually know what is in their food but especially where it has come from.

I thought I would start a blog to share recipes, ideas and fitness bits, general life and other bits too such as my textile work!
